What Does it Stand for? |
In 1976, the US Department of Agriculture (USDA) lowered and broadened its quality grading standards resulting in greater variations in beef quality. In response the American Angus Association created the CAB Program in 1978. The importance of maintaining and protecting beef quality and consistency ahs been proven by the phenomenal success of CAB.
CERTIFIED ANGUS BEEF® is the most consistently pleasing beef available and to ensure exceptional consistency it has to pass seven more quality checks than regular USDA Prime. Its finer marbling and strict quality standards mean that every bite is flavorful, juicy and tender. Most steak restaurant use USDA choice grade meat or lower. However at FORTUNES we use only USDA PRIME that is also CERTIFIED ANGUS BEEF®.
In addition, we are licensed by the famous American Angus Beef Association and are therefore inspected regularly to ensure that we are in full compliance with regulations. This handful of restaurants in the USA (and currently the only restaurant in Collier County) that is serving exclusively USDA PRIME CERTIFIED ANGUS BEEF® steaks.
It's clear why our claim to serve the finest beef in America is justified.
